Ingredients:

  • 1 Large Onion, (Grated).
  • 20ml (.68fl oz) Curry Powder.
  • 10ml (.34 fl oz) Cooking oil.
  • 10ml (.34 fl oz) Brown Vinegar.
  • 500g (18 oz) Cooked Speckled Sugar Beans.
  • 3 Large Potatoes, (Grated).
  • 1 Egg (Beaten).
  • 150ml (5.07 fl oz)Cake Flour.
  • 5ml (.17 fldoz) Baking Powder.
  • 5ml (.17 fl oz) Mixed Herbs.
  • 7ml (.24 fldoz) Sugar.
  • 7ml (.24 fl oz)Salt.
  • 5ml (.17 fl oz) Freshly Ground Salt & Black Pepper.
  • Enough oil to Fry in pan.

Method:

Fry onion and curry powder in oil until brown. Mix vinegar, beans, potatoes, onion and egg together. Combine cake flour, baking powder, herbs, sugar, salt and pepper.Add to bean mixture and mix well. Spoon mixture into warm - hot oil and fry on both sides until golden brown.

Make approx 40 cakes.


Ingredients:

  • 400g (14 oz) Peeled Carrots.
  • 250g (8.8 oz) Onions.
  • 50ml (1.7 fl oz) Boiling water.
  • 25g (.88 oz) Butter.
  • 5ml (.17 fl oz) Curry powder.
  • ½ Cube of beef stock.
  • 1 Apple, grated.
  • Salt to taste.
  • Finely chopped parsley.

Directions:

Cut the carrots and onions in thin slices. Melt the butter in a large frying pan with a lid, sprinkle curry powder over and fry for a few minutes. Add the vegetables and fry lightly.Dissolve the stock cube in the boiling water and add with the apple to the vegetable mixture. Season with salt.

Put the lid on and simmer slowly for about 15 minutes until carrots are soft.


Ingredients:

  • 4 Potatoes, peeled and cut into large chunks.
  • 2 Quartered and cut into large pieces baby marrow.
  • 1 Seeded and chopped green bell pepper.
  • 1 Sliced clove garlic.
  • ½ Cup dry bread crumbs.
  • ¼ Cup olive oil.
  • Paprika to taste.
  • Salt to taste.
  • Pinch ground black pepper to taste.

Method:

Preheat oven to 200°C | 392°F. In a medium baking pan, toss together the baby marrow, potatoes, green bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt and pepper. Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

 Note: Green pepper is same as red bell pepper and all the different varieties could be used it up to you what is available.
