  • .454kg (1 lb) Braising or stewing steak cut into four steaks.
  • 2 Onions, sliced.
  • 177ml (6 oz) Guinness (you may drink the rest).
  • 1 Teaspoon Worchestershire sauce.
  • Cooking Oil.
  • Seasoned flour (Flour with salt and pepper added).
  • Salt and pepper.

Method:
First, pour a couple of tablespoons of oil into the casserole dish and heat on a medium heat.
Peel and slice the onions. Roll the meat in the seasoned flour and fry in the dish for long enough to get a nice brown color. Remove the meat and set aside. Now, add the sliced onions and fry until they are also beginning to brown.

Arrange the meat on top of the onions and add the Guinness and Worchestershire sauce, with a little salt and pepper. Cover the casserole with a lid and cook in the oven for about 3 hours.
I like to serve this with either mashed, boiled or roast potatoes and a mixture of vegetables.
This goes well with just about anything including squash, broccoli and sweet potatoes.
I guarantee a juicy, tender piece of beef cooking it this way.


Ingredients:Steak and Veggie Stir Fry

  • 350g (.771lb)  Steak, trimmed.
  • 100g (.220lb) Mushrooms, quartered.
  • 100g (.220lb) Bean sprouts.
  • 4  Spring onions, finely sliced.
  • 2 Cloves garlic, finely chopped.
  • 2 Tablespoons soy sauce.
  • 1 Red sweet pepper, seeded and thinly sliced.
  • 1 Stalk celery, thinly sliced.
  • 1 Carrot, peeled and thinly sliced.
  • 1 Tablespoon sesame oil (or sunflower oil).
  • 1cm (.394") Piece root ginger, peeled and finely chopped.
  • ¼ Teaspoon salt.
  • Pinch Black pepper.

Method:
Using a very sharp knife, cut steak into strips. Heat oil in a wok or heavy-based frying pan until very hot. Add the ginger, garlic and spring onions and stir-fry for 2 minutes. Add the red sweet pepper and steak.

Stir-fry for 3 minutes, or until the steak is no longer pink. Add the celery, carrot, mushrooms and soy sauce. Stir-fry for a further 3 minutes. Stir in the bean sprouts and stir-fry for 1 minute. Season with salt and black pepper.


Serve immediately.


Skillet-Steak.jpgIngredients:

  • 2 Porterhouse or T-bone steaks, about 2.54 cm (1")  2.08 cm (.82") thick.
  • Vegetable oil.
  • Salt and pepper.
  • 2 Tablespoons butter.
  • 1 Tablespoon Worcestershire sauce.
  • ¼ Cup Jack Daniel's® Tennessee Whiskey.

Method:

Heat a large cast-iron skillet over high heat until very hot, about 10 minutes. Generously rub steaks with oil and sprinkle with salt and pepper. Cook steaks one at a time. Sear steak on one side, about 5 minutes. Flip and cook an additional 5 minutes for medium-rare, 6 minutes for medium. Remove the steak from the skillet and keep warm.

Repeat with the second steak and keep warm. Melt the butter in the skillet, stir in the Worcestershire sauce and Jack Daniel's®. Bring to a boil and cook about 2 minutes. Slice steaks, if desired. Pour sauce over steaks and serve immediately.

Makes 4 servings.
