Ingredients:

  • 16 Pints cold water.
  • 2 Heaped tablespoons ground ginger .(Optional 1 small piece whole dry ginger).
  • 2 Teaspoons cream of tartar.
  • 1 Teaspoon dry yeast.
  • 7 Cups sugar.
  • 2 Teaspoons Tartaric Acid.
  • 1 Cup raisins.

Method:

Add all ingredients in a bucket. Let stand for 8 hours.

For better, stronger taste, let it ferment for 3 days.


Ingredients:

  • 14 x 750ml Luke warm water.
  • 2kg Sugar.
  • 2 Cakes yeast.
  • 4 Tablespoons crushed ginger.
  • 1½ Cups raisins.

Method:

Dissolve sugar in the water. Ad crumbed yeast. Add ginger, mix thorouhgly. Add the raisins. Pour in bottles and close with a cork lid. Let stand for 2 days. Strain the ginger beer through a sieve or cheese cloth.

Put in cooler.


 

Ingredients:

  • 24 x 750ml Cold water.
  • 3kg Sugar.
  • 2 Cakes yeast.
  • 60ml Ground ginger.
  • 150g Raisins.
  • 10ml Cream of tartar.

Method:

Thoroughly mix the sugar, cream of tartar, ginger, crumbed yeast cakes. Add water, then lastly the raisins. Seal the container tight. Let stand at least a day and night, until the raisins are risen. Strain through a sieve or cheese cloth.

Bottle and seal tight Let stand in fridge for 2 days before serving.


 

Ingredients:

  • 10 Litre water.
  • 30ml Ground ginger.
  • Zest or 2 oranges.
  • 3kg Brown sugar.
  • 10ml Tartaric acid.
  • 150 g Raisins.
  • 20ml Dry yeast.
  • 30g Sugar.
  • 500ml Luke warm water.
  • 2 Slices brown or white bread.

Method:

Bring the 10 litre water, ginger, 3 kg sugar and orange zest to the boil. Pour this mixture in a 20 Litre container and fill up with extra water. Add the raisins and Tartaric acid. Mix the 500 ml luke warm water, yeast and 30 ml sugar. Let stand for 30 minutes until foamy. Put the bread on ginger mixture, scoop the yeast mixture on the bread. Leave for approx. 3 days to ferment and the raisins are risen to surface. Remove the bread. Strain the Ginger beer and bottle.

Note: The juice and pulp of the 2 oranges can also be added.


 

Ingredients:

1 Litre water.

12ml Ginger jam.

500g Sugar.

125ml Orange juice.

125ml Lemon juice.

Method:

Finely mince the pieces of ginger jam. Add the ground ginger to the water and boil for 5 minutes. Add sugar and bring to the boil again, boil another minute. Strain the mixture through a cheese cloth. Add the orange juice and lemon juice. Cool down and refrigerate.

When served, it may be diluted with water, if the taste is to strong.
